Watch for symptoms of Celiac disease in children.

Celiac Disease or Gluten-Sensitive Enteropathy is a digestive disease that damages the villi in our small intestines that help us absorb nutrients from the food we take in. In children, we recognize celiac disease by the symptoms that appear before they are two months old as infants. They search for high-levels of anti-tissue transglutaminase antibodies (tTGA) or EMA (anti-endomysium antibodies). There are cases where the results are given back negative but the child still retains celiac disease symptoms which may need more blood tests to confirm the actual cause.

Biopsy- This is an operational test where a piece of the small intestine is taken for tests. The purpose of the biopsy is to check for damages to the villi that maybe caused by the CD or symptoms of the celiac disease.

Dermatitis Herpetiformis – DH (dermatitis Herpetiformis) is a rash on the skin that occurs in 15-25 % in people with celiac disease, having dermatitis herpetiformis does not necessarily mean a person has CD but it is a good way to determine if the person has it by taking out the glutens in the daily intake to check is any adverse reactions occur concerning the stomach pains. People with DH but no celiac disease should take antibiotics such as Dapsone to help stop the itching and blistering of their skin on their elbows, knees and buttocks since most people who have dermatitis herpetiformis do not have celiac disease.

Celiac disease can turn deadly!

Once thought, Celiac disease (CD) is far more common than we. Most celiac disease symptoms begin to fade after a patient adopts a strict gluten-free lifestyle.

What Are the Most Common Celiac Disease Symptoms?

The most common symptoms of CD involve intestinal distress. This is because the antibodies triggered by your consuming gluten attack the lining of your small intestine, causing inflammation and damaging the microvilli along your intestinal wall. Those symptoms include problems like flatulence, bloating, cramping, and alternating episodes of diarrhea and constipation.

Usually these symptoms will start to fade after about two weeks of strictly adhering to a gluten-free diet. For some people in rare situations, it may take up to a year to experience real relief from their symptoms. If you experience no relief after a year, then you may have refractory CD, which is an even more serious condition.

What Is Refractory Celiac Disease?

While you can treat most forms of celiac disease, also known as celiac disease, CD or celiac sprue disease, with a gluten-free diet, in some rare cases people don’t respond to this dietary restriction. Refractory celiac sprue disease is basically CD that does not respond to a gluten-free diet. Before this is diagnosed, many other similarly manifesting conditions must be eliminated as possibilities, because many of them are far more likely.

There are two types of refractory CD.

Type I Refractory Celiac Disease

This is the most common type and it exists when an intestinal biopsy indicates normal cell behavior within the intestinal lining and the patient is responsive to steroidal treatment of their symptoms.

Type II Refractory Celiac Disease

While very rare, this type of celiac sprue disease is in fact a deadly form of cancer. In addition to not responding to a gluten-free diet, patients with this type of CD do not respond to steroidal treatment. Doctors will confirm Type II refractory CD with an intestinal biopsy showing clear signs of abnormal cell behavior.

Many researchers now consider this a form of T-cell lymphoma, a malignant cancer.

Keep in mind, however, that in most cases where a patient is not responsive to a gluten-free diet, there are usually other more benign underlying conditions causing the problem (like lactose intolerance) or the patient is not being vigilant enough about eliminating gluten from his or her diet.

If you suffer from celiac disease symptoms, I urge you to adopt a gluten-free diet right away, and exercise vigilance. If your symptoms won’t go away, you should consult a doctor for guidance on how to proceed and eliminate the worst possible scenarios.

Gluten allergy not actually a food allergy.

With celebrities and major food manufacturers turning the gluten-free diet into the latest fad diet, more and more people are wondering about the origins of the need to avoid gluten. I’m starting to see some dangerous misuse of the vocabulary surrounding the gluten phenomenon. One term in particular that concerns me is the term gluten allergy.

Celiac Disease Is Not a Food Allergy

They must strictly avoid gluten for the rest of their lives when people are diagnosed with celiac sprue disease. Because gluten is a protein composite present in barley, rye and wheat, people think that having to avoid gluten means they have a food allergy.

But celiac disease is not a food allergy. A food allergy is a type 1 hypersensitivity involving cells called Immunoglobulin E (IgE). This kind of allergy involves an almost-immediate or immediate response to the consumption of the allergen.

Celiac disease is an autoimmune disease; it is not an allergy. This means some people with a severe case of this disease might be able to eat a slice of bread dense with gluten, yet not experience an immediate, tangible reaction.

This doesn’t mean gluten isn’t doing severe damage. Somewhere in their bodies, most likely along the lining of their small intestine, gluten is still wreaking havoc. The results of that havoc will eventually appear … but it could take days, weeks or even months before the damage becomes clear.

When people think of celiac disease as an allergy, they may assume that they must have an immediate response to consuming anything with gluten in it. They may assume they don’t have this challenging disease if they eat gluten and don’t notice any immediate gluten intolerance symptoms.

What Is A Gluten Allergy?

Technically, there is no such thing as a gluten allergy. You can have a wheat allergy, a non-celiac gluten sensitivity or celiac sprue disease. The term gluten allergy doesn’t have a specific medical meaning.

Rather, it has become a kind of layman catch-all term for the many conditions under the gluten intolerance umbrella. These conditions include not only a non-celiac gluten sensitivity, celiac disease and a wheat allergy, but also gluten ataxia and dermatitis herpetiformis.

Gluten ataxia occurs when the antibodies triggered by gluten attack the base of the cerebellum, the part of your brain that controls your coordination. Dermatitis herpetiformis is a skin rash that in most cases is triggered by the consumption to gluten. It is not really an allergy, either, because it is an autoimmune response that may take days to manifest itself after a patient consumes gluten.

All of these different terms fall under the term gluten allergy. It is most important to realize that this is a layman term and not a medical diagnosis. Don’t let this layman term fool you into thinking celiac disease is a food allergy, or you may overlook the real possibility of gluten causing long-term consequences to your health.

Paleo meatloaf, boom baby!

From standard meatloaf to Paleo meatloaf with just a few small changes!

The humble meatloaf is a long time household favorite. And with a couple of subtle modifications the recipe can be altered enough to be categorized as a fully approved Paleo Meatloaf!

As you probably already know, the Paleo diet plan is about enjoying food that is in its natural form and that can either be hunted or gathered. Keeping this in mind, the humble meatloaf does not truly take much altering at all so you can feel comfortable in serving up a fully fledged Paleo meatloaf.

There are a few specs that you need to be aware of but the beauty of a Paleo Meatloaf is in its simplicity. It’s another one of those meals that taste just as great (some would say even better!) the second time around so don’t be afraid to make heaps that will last a few additional meals! As long as you stay away from the non authorized Paleo items such as grains, artificial sweeteners and especially any processed or synthetic foods, you should be right and you can always add many more different but natural ingredients.

Thing to focus on is the main ingredient … the beef for the Paleo meatloaf! Great, if you are fortunate or lucky enough to be able to get your hands on some home grown beef! However, most of us still have to purchase our food from the marketplace or grocery store and what you are trying to find there is Organic Beef which has been preferably grass fed – not grain fed.

Next substitute is the breadcrumbs. Now breadcrumbs are normally an essential part of a quality meatloaf but uh oh … no grains allowed in a Paleo Meatloaf! You can avoid this detail rather effortlessly by grinding up some oatmeal till it looks and feels the same consistency and texture of breadcrumbs.

1 teaspoon of garlic.

1/2 cup catsup (recipe above).

Toss everything into a large mixing bowl but only use half the catsup as you will require the other half a little later. Mix together thoroughly. When blended, place the mixture into a softly greased pan. Now grab the remaining catsup and spread it evenly over the top of the meatloaf. Pop it straight into a 350 degree oven and let it cook for around half an hour.

Paleo Meat Loaf With Mushrooms.

The mushrooms not only contribute to the remarkable taste of this dish but also assist it bind together and all in all, it results in a very filling meal. This recipe serves 5 Neanderthals!

Ingredients.

1 tsp ground black pepper.

1 medium onion, finely chopped.

2 cups white button mushrooms, carefully chopped.

Spotting Celiac Disease Symptoms.

This lower level of diagnosis could be the reason that in a previous articles on the gluten free pages site estimated adjusted celiac searches in America at 2.7 searches per celiac per month – much less than Australia’s value of 4.2.

Taking the higher level of 20 % diagnosis, this means that in Australia (population 21,550,000, Jan 2009) that 215,000 people are most likely celiac but 170,000 people don’t know it. Note that gluten intolerant people may increase the amount of people seeking Gluten Free solutions by a factor of three or four times the Total Celiac values.

In December 2008, the top 200 search terms on Google Australia, related to gluten free products was 470,000 searches.
